- 2 eggs
- 2 slices of nice bread (i really like sourdough)
- 1 small white onion
- 1 clove of garlic
- grated cheese (i like gouda)
- butter to bake in
- a bit of sugar
- salt, pepper and some italian seasoning
#8 A Nice Sandwich
This is a recipe for my favorite sandwich! I eat it very often, so I thought it would be fun to put the recipe here. It's great for lunch, or even a late breakfast.
The recipe:
- Put a pan on the stove on low heat and add some butter.
- Slice the onion in half moons and add them to the pan, along with some salt and a little bit of sugar. Let it caramelize for a while.
- Crack the eggs and put them in a little bowl, along with the salt, pepper and italian seasoning. Slice the garlic very fine and add it to the egg mixture. Beat it up. You could add a little bit of milk to this, but in my opinion the sandwich will loose some of its structural intergrity.
- You could now optionally slice up some cherry tomatoes and add them to a pan, although I don't do this very often.
- Now, shape the onions in a rectangle inside your pan, the same size as your two slices of bread next to each other. If the pan is really dry, you could add some more butter.
- Quickly put the egg mixture in the pan and put all of the cheese and the two slices of bread on top of it, before the egg has time to set.
- When the bottom side of the egg is done, put a bit of butter or oil on the slices of bread and flip the sandwich around.
- Fold the sandwich closed and put up the heat to medium, so the bread gets toasted. When both sides are a bit brown, the sandwich is done!
A tip I have is to not put the sandwich on the place so all of the bread touches the surface of the place, but to put it on the raised side of the place, so part of it sticks out. This way, the bottom doesn't get soggy. Enjoy!
